Ingredients:
1 1/2 cups of butter or margarine (that is 3 sticks-I use 2 butter and 1 margarine)
1 cup sugar
1 well beaten egg
1 tsp. baking powder
2 tsp. vanilla
4 cups sifted flour
Directions:
Thoroughly cream butter and sugar. Add egg and vanilla. Beat well. Sift dry ingredients add gradually to creamed mixture. Mix to smooth dough. Force through cookie press forming various shapes. Bake at 400*F for 8-10 minutes.
Makes 4 dozen

Pumpkin Cookies
Ingredients:
1/4 pound butter
1 cup brown sugar
1/4 cup white sugar
2 eggs
1 cup mashed pumpkin or yellow squash
1 tsp. lemon extract
1 cup nuts
Sift together:
2 cups flour
2 tsps. cinnamon
1/2 tsp each salt,cloves,nutmeg,and ginger
1 tsp baking soda
Directions:
Cream together butter, sugar, eggs, and pumpkin. Add dry ingredients. Blend in extract and nuts. Drop by spoonful onto greased cookie sheet. Bake at 400*F for 10-12 minutes.
Makes about 5 dozen

Mint Chocolate Chip Cookies
Ingredients:
1 pouch (1lb 1.5oz) Betty Crocker sugar cookie mix
1/2 cup butter, softened
1/4-1/2 teaspoon mint extract
6-8 drops green food coloring
1 egg
2 cups semisweet chocolate chips
Directions:
Heat oven to 350*F. In a large bowl, stir cookie mix, butter, extract, food coloring, and egg until soft dough forms. Stir in Chocolate chips. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet. Bake 8-10 minutes or until set. Cool for 3 minutes. Remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature. Enjoy!
